3 Lb. Light Dry Malt Extract
8- oz. Crystal 60L
4- oz. White Wheat
1-1/2 Lb. Munich Malt
1-1/4 Lb. Melanoidin Malt
1 Lb. U.S. 2 row Malt
1st) 1/2-oz. Amarillo Hops Plug (Mash Hops)
2nd) 1/2-oz. Northern Brewer Hops Pellets (60min)
3rd) 1/2-oz Amarillo Hops Plug (10 min)
1/2-Whirfloc Tablet (Last 10 Minutes)
Safale #56 American Ale Yeast
1-1/4 cup Dry malt/ priming
Add the First Hops in with the grains. Break apart the Hop Plug and evenly blend the hops with the grain before Mashing. Mash grains & Hops for 60 minutes in 1-1/2 gallon of water @ 152 degrees. Sparge with 1-1/2 Gallon of water @ 168 degrees. Add water to brew pot for 2-1/2 gallon of wort. Heat before it comes to a steam. Remove from stove and add the 3 Lb. Dry Malt Extract. Bring to a boil and add the 2nd hops. Boil for 50 minutes and add the 3rd hops and Whirfloc. Boil for 10 minutes and remove the pot from heat. Cool and strain well. Top-up to five gallons in the fermenter. Ferment at 68-70 degrees for 5 day or when fermentation slows. Transfer to secondary and ferment for 3-5 days. Best age for 4 weeks.
