O. G. 1.038– 1.040 / F. G. 1.010 – 1.012 Hop IBU’s 11
3 Lb. Plain Light Dry malt extract
1-3/4 # crushed Lager Malt
4 oz. crushed crystal 10L.
12 oz. crushed Munich
1/2 -oz. German Hallertau Mittelfruh (bittering) 60 min Boil
1-oz. Czech. Saaz (finish) Add last 10 minutes
Gelatin Finings (for clarity in secondary)
WLP-840 American Yeast ( 52-58 degrees), or WLP-940 Mexican Lager
1-1/4 Cup Dry Malt for priming
Steep All Grains in 1-gallon - (or make sure the grains are covered with water by 1/2"), of 150 degree water for 60 minutes. Sparge with 1-gallon of water @ 168 degrees. Add grain water to brew pot and top up to 2-1/2 gallon volume. Add malt extract and bring to a boil. Add the Bittering hops and boil for 50 minutes. Next add the Finish hops and boil for 10 minutes.
Cool Wort to 68 degrees, Pitch yeast at 68 degrees and when fermentation starts lower temp. to 55 degrees. Transfer to secondary when fermentation slows add the Gelatin Finings and lower temp. to 50 degrees. After fermentation stops lower the temp. to 40 degrees for 7 days. Bottle and cold condition at 55 degrees.
Best aged for better flavor 4-6 weeks. But try one after two weeks. Enjoy.
