Beer Ingredients

 

Summer Ale 05 - Extract -- O.G. 1.049-1.051 IBU. 11

This is a light refreshing wheat made in the shadow of the "Sam Adams Summer Wheat'

1/4 Lb. Crushed Wheat

1/4 Lb Crushed Carapils

7 Lb's Wheat Malt Extract

1/4 oz. Hallertau (60 min.)

1/4 oz. Hallertau (15 min.)

1 Tablespoon Lemon Zest (15 min.)

1 gram Paradise seeds (15 min.) (little less than an 1/8 tsp.)

1/4 oz. Czech Saaz ( 2 min.)

White Labs # WLP 008 East Coast Yeast

3/4 dextrose for bottling

Steep the Crushed grains in 1/2 gallon of 150 degree water for 25-30 minutes. Remove grains from water and sparge with 1/2 gallon water at 168 degrees. Discard grains, add water to brew pot for 2-1/2 gallons.

Add Malt extract, bring to boil and add the first hops. Boil for 45 minutes. Add the second hops , lemon Zest ( yellow only from the outside of a lemon), and the crushed Paradise seeds. ( place seeds in a paper bag and press with a beer bottle to JUST pop open, not turn into a powder). Boil for 13 minutes and add last hops. Remove from heat and cool, strain well before pouring into fermenter. Cool to 72 degrees and add yeast.

Transfer to secondary when primary fermenter slows. Finish in secondary.

Bottle age for only 3-4 weeks.
