4 Lb's Pears

6 pints Warm Water

2 Lb's Sugar or starting Gravity of 1.080

2-1/2 tsp. Acid Blend

1/2 Tsp. Pectic Enzyme

1-tsp. Yeast Nutrient

1 ea. Campden Tablet per Gallon

Cuvee Yeast

Clean out side skins well and remove pits.

Chop into small 1/4" pieces for pressing or grind. A food juicer or chopper works well.

It is very important the the Pears be chopped and pressed or juiced rapidly. After you have pressed out all the juice from the pears, immediately add the crushed campden tablet to stop browning. Discard the pulp.
