Varietal Grape Wine

Follow the Basic recipe for One Gallon.

Because the Acidity and Brix (sweetness) changes each year.

You must test your grapes. 

Adjust acid levels:  White grapes, Chardonnay, Riesling .65 - 70%

Red Grapes, Merlot, Cabernet, 65%

Use only Fully Ripe Grapes, no mold. De-stem and crush. Red grape pulp is used in the primary must but white grape pulp does not need to be added into the primary must.

 Used 16-18 Pounds of Grapes per gallon of wine.

Lalvin # EC1118 yeast for red or white wines

or

Lalvin 71B-1122 for more fruity red
