Brewing techniques

Extract kits; These kits contain a small amount of cracked grain (8-12 ounces) with a small grain bag, canned or dry malt extract, pre weighed hops, priming sugar or dry malt, caps and yeast (may be dry or Liquid) with full instructions. This is a great kit for the new and intermediate brewer. Requires a 2-1/2 Gallon boil and top up to 5 gallons with water to complete the recipe.

Partial Mash / Grain Kits; These kits contain 3-5 pounds of cracked grain with a large  grain bag, canned or dry malt extract, pre weighed hops, priming sugar or dry malt, caps and yeast (may be dry or Liquid) with full instructions for the mash and boil. This is a great kit for a brewer learning all grain. Requires a 2-1/2 Gallon boil and top up to 5 gallons with water to complete the recipe. Yes this is still a stove top recipe.

All Grain Kit: These kits contain from 8-18 pounds of grain. All hops pre-measured, priming sugar or dry malt, caps and liquid yeast with full instructions for the mash and boil.

California Common:(Steam Beer Style) In the Shadow of Anchor Steam

 

Continental Pilsner Style: Smooth light malt flavor with a low hop balance. This is a

anytime favorite.

Cream Ale: Straw in color with a light malt flavor, medium body an easy hop finish flavor

 

Classic English Pale Ale: Move over Bass Ale. Our English Ale has English Great malt flavor and Hop balance. Amber in color, this is a real crowd pleaser.

Dutch Lager Style: In the shadow of the Famous Grolsch Dutch Lager. Using German hops. And fermented as an ale with the Nottingham Yeast.

English Nut Brown Ale: English malt and hops blend with a slight nutty flavor for a mellow brown ale.

 

English Style IPA: (Indian Pale Ale); No skimping on the hops her. Great English and Amber malts with big English Dry hop flavor.

English Smooth Ale: Light in body with just the right blend of malt and hops to have a smooth and creamy finish.

 

Honey Mild Ale: The smooth finish and aroma of honey. Great English hops makes this beer a real hit.

 

German Oktoberfest Style: This Great beer is easy to enjoy all year long. Copper in color, with slightly toasted and light Carmel malt flavor. Balanced with of course German Hops.

 

Irish Stout: Smooth finish Copied from the famous 'Guinness Irish Stout' style.

 

Big Sky Amber Ale: Big American hopped beer, with a slight Carmel but full flavor. (39 IBU)

 

Brown Porter: Sweet Malt Flavor with Classic English hop bitterness, the flavor of a traditional Porter.

 

South of the Border Amber Ale: ( Dos Equis Style) Deep Amber in color and smooth in flavor. Finishes with just a slight hop aroma.

 

Red Red Ale: Toasted malt and German Carmel malt gives this beer it's Red Color. Smooth low hop finish.

 

West Coast Hopped Pale Ale: If you like the Flavor of Cascade Hops, then you will love this Ale. Amber color with the smooth a spicy flavor and big finish from Cascade Hops.

Four basic brewing techniques for the Home Brewer.

 
    1)  'Pre-Blended Malt', This is pre-made base malt. The barley has been converted from starch to fermentable sugar. These extracts will already have the hops cooked in and specialty grain flavor and color added. These malts do not require cooking, then malt house or brewery has done this step. You can add to these pre-blended malts to create a beer to your taste. The beer is very good for the beginning brewer with no skill level.
    2) 'Extract' recipes,  Most base malt extracts are just that, "Base malt" only, and they do require cooking.
An extract kit will have the base malt with the hops (1-4) and the specialty grains (normally only 3/4 Lb. )separate. The brewer will steep the small amount of grain and then cook the base malt and hops into a recipe style picked. Most extract recipes will be 2 gallons to 2-1/2 gallons boil for an hour and easy cooled in an kitchen sink. These recipes really let the brewer learn about all the ingredients and experience the ground level of craft brewing. It is very easy to create a recipe of your own using this technique very quickly. These types of recipes are relatively easy and required little or no previous skill. (if you can boil water)
 
    3) 'Partial Mash'  recipes, Will have the base malt extract with the specialty grains and hops that will need to be cooked. But, not all the base malt is from extract. A portion of the base malt is in grain form. A recipe may have 3-5 pounds of grain along with the specialty grain. The base grain malt must then be 'Mashed' to convert the starch to sugars, then slowly rinsed. Because the amount of grain is larger, a large container is needed for the grain. This is called a 'Mash Tun'. A small mash tun is used for this method. These two procedures can take up to or more than two hours. Then the extract malt is added to the grain water and the boil is started.  Most 'Partial Mash' recipes can be done in the same size brew kettle as the extract recipes. Thus 'Partial Mash is still, stove top. Most 'Partial Mash' recipes will be 2-1/2 gal to 3 gallons boil and easy cooled in an kitchen sink.
    These types of recipes require a little more time and a little more equipment. The results in Partial Mash brewing is the ability to create a beer closer to your style. A more defined taste of the malts and hops are also present.
 
    4) 'All Grain' recipes, are just as the name says, 'All Grain'. This means that the complete base malt comes from the grain and 90-95 % of the brewing sugars come from the grain. Because the amount of grain is much larger (10-18 pounds) the size of the container is much larger to do the mash.  The mash tun may be 5 to 10 gallons in size. Also, because we are not using extract and all the sugars are being removed from the grains, the boil is larger. Most all 5 gallon 'All Grain' recipes for will start at 6 to 6-1/2 gallons. A much larger brew kettle is needed at 8 to 10 gallons for an 5 gallon batch. All grain brewing requires a skill level, that may not be for all brewers.
     Although the equipment and time for "All Grain" brewing is a much higher skill level. The results in 'All Grain' brewing is the ability to create a beer to style, the ability to more closely define the taste of the malts and copy exactly or almost exactly a beer as it was made in a brewery.
