Text Box: Take note of how the filter Plate Assy. is taken apart.
First, Open the 3 piece plate filter Assy. and place a filter pad ( Always handle the filter pads from their edges ONLY ) into the left inside of the plate filter. Next insert the center ring divider. Now place the next filter pad on the ring and place the right outside plate over the pad. Attach the screw and nuts into each slot and HAND TIGHTEN ONLY.  The inlet hoses with a 'Y' fitting and a Black disconnect is attached to the ( 2 ) outside barbed fittings on the filter assy. (fig. 1 ) Press each tubing in place taking care NOT to wiggle the tubing onto the barbed stems. These are the "Inlet" fittings. Place the other tubing supplied onto the center barbed fitting. This is the filter 'outlet'. Make sure the outlet shut-off is open , and the open end is able to drain into a sink or bucket. The filter plate assy. should also be positioned were it can drain.
Next fill the pre-sanitized five gallon tank with TWO Gallons of Filtered Water. Seal and Pressurize the tank with 3 PSI of filtered air, Co2 or nitrogen. Attach the Black ball fitting from the Plate Filter on to the outlet of the Five Gallon Tank. The pressurized water will fill the filter assy. and start to leak. Slowly tighten the screws on the plate filter from one side to the next, while closing the outlet shut off. This will allow the filter pads to swell and allow the Filter Assy. to seal.  Open the filter outlet ( fig. 2 ) shut off slowly to allow all the water to flush through the filter assy. After the water has emptied from the filter CLOSE the SHUT OFF VALVE. Note: If the Filter Assy. continues to leak around the assy. Disconnect from the water tank and open the filter assy. Make sure the pads have not moved out of the inlet in the filter assy.
    Filtering
1) Transfer your wine or beer into the sanitized stainless steel five gallon tank. ( fig. 2 ) Take care NOT to splash as you transfer.
2) If filtering Wine, seal the tank and pressurize the tank with 3 PSI of filtered air from an Oil-less air pump OR  nitrogen.
If filtering Beer,  seal the tank and pressurize the tank with 3 PSI of Co2.
3) Attach the Black Ball fitting to the outlet on the Stainless Steel tank.
4) Open the filter out-let shut off valve slowly to transfer the product to another container or for bottling.
Flow rate may be increased but DO-NOT pressurize past 5 PSI.
